February is the month to see lots of red, from Valentines, red sweaters, and heart shaped boxes of candy, but how about tomatoes? Tomatoes tend to wait until the middle of summer to take center stage but at Isaac’s Café, why wait for summer? Thanks to hard working volunteers, we have a freezer full of heirloom tomatoes, ripened to perfection, just waiting to make your lunch experience something special.
Here are a few heart healthy facts about tomatoes that you may not know. Tomatoes are rich in anti-oxidants, vitamin A and C, folic acid and beta-carotene. They are also rich in a substance called lycopene which helps protect your heart. When the lycopene in a tomato gets together with even a small amount of olive oil, the body’s absorption of the beneficial nutrients increases. If you add some garlic and fresh made pesto to the mix and serve it over whole wheat pasta, well you have a heart healthy meal that is not only good for you but scrumptious. So, guess what’s for lunch at Isaac’s.
