Garden Giants are here! No, not the ones being constructed by Thomas Dambo and his crew. I’m talking about PUMPKINS, the giants of the garden. Just like Cinderella’s pumpkin carriage, we were gifted a crate of “fairytale pumpkins.” Naturally, I started thinking about the delicious dishes that could be made from these mighty garden giants and came up with a week’s worth of tasty treats.
Pumpkins are not only big in size but they are nutritional powerhouses. A cup of pumpkin is a mere 26 calories and contains no saturated fats or cholesterol; however it is rich in anti-oxidants, minerals, vitamins and dietary fiber. It is one of the vegetables in the Cucurbitaceae family, like squash and cucumbers, that feature the highest levels of vitamin-A, providing 246% of the recommended daily requirements. It also contains Zea-xanthin, which has benefits for eyes and “age-related macular disease” (ARMD) in older adults.
